Instructions
- Step 1:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- Step 2:
- In a large bowl, mix together ground beef, ground pork, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, thyme, salt, and pepper until just combined do not overmix.
- Step 3:
- Shape the mixture into a loaf (about 8x4 inches) on the prepared baking sheet or pack it into the loaf pan.
- Step 4:
- In a small bowl, mix together ketchup, brown sugar, and Dijon mustard for the glaze. Spread half of the glaze over the top of the meatloaf.

- Bake for 40 minutes. Remove from the oven, spread the remaining glaze over the meatloaf, and return to the oven for 15 20 minutes or until the internal temperature reaches 160°F (71°C).
- Step 6:
- While the meatloaf bakes, place potatoes in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil, reduce to a simmer, and cook until potatoes are fork-tender, about 15 18 minutes.
- Step 7:
- Drain the potatoes and return to the pot. Add warm milk and butter. Mash until smooth and creamy. Season with salt and pepper to taste.
- Step 8:
- Let the meatloaf rest for 10 minutes before slicing. Serve with mashed potatoes.
