Classic Meatloaf Mashed Potatoes (Printable)

# What You Need:

→ Meatloaf

01 - 1.5 lbs ground beef (80/20)
02 - 0.5 lbs ground pork
03 - 1 cup breadcrumbs
04 - 1 small onion, finely chopped
05 - 2 cloves garlic, minced
06 - 2 large eggs
07 - 1/3 cup milk
08 - 3 tbsp ketchup
09 - 2 tbsp Worcestershire sauce
10 - 1 tsp dried thyme
11 - 1 tsp salt
12 - 1/2 tsp black pepper

→ Glaze

13 - 1/3 cup ketchup
14 - 2 tbsp brown sugar
15 - 1 tbsp Dijon mustard

→ Mashed Potatoes

16 - 2 lbs Yukon Gold or Russet potatoes, peeled and cut into chunks
17 - 1/2 cup whole milk, warmed
18 - 4 tbsp unsalted butter
19 - Salt and black pepper, to taste

# How-To Steps:

01 - Preheat oven to 375°F. Line a baking sheet with parchment paper or lightly grease a loaf pan.
02 - In a large bowl, gently mix ground beef, ground pork, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, thyme, salt, and pepper until just combined. Avoid overmixing.
03 - Form meat mixture into a loaf approximately 8 by 4 inches on the prepared surface or press into loaf pan.
04 - In a small bowl, combine ketchup, brown sugar, and Dijon mustard. Spread half of the glaze evenly over the top of the loaf.
05 - Bake for 40 minutes, then remove from oven.
06 - Spread remaining glaze over meatloaf and return to oven for 15 to 20 minutes until internal temperature reaches 160°F.
07 - Place potatoes in a large pot, cover with cold water, add salt, bring to boil, then simmer until tender, about 15 to 18 minutes.
08 - Drain potatoes and return to pot. Add warm milk and butter. Mash until creamy and smooth. Season with salt and pepper.
09 - Allow meatloaf to rest for 10 minutes before slicing. Serve with mashed potatoes.
